Abstract
This paper shows the study of the hydrolysis reaction of crude palm oil giving by lipase from Candida rugosa. The studied factors were agitation level, bleaching effect and lipase concentration. Experimentally 79 - 93% hydrolysis were achieved in 2 and a half hour. The reaction rate was increased with the increment of the impeller rotational speed as well as increasing the lipase concentration. Although the literature cites bleaching as a beneficial advantages to enzymatic hydrolysis, this procedure do not have a significant beneficial effect on the reaction.
